Lotus root is the rhizome of Nelumbo nucifera, also known as lotus. It contains
high amounts of water and starch. It is slightly sweet and has a crunchy
texture and can be eaten raw or cooked.
Lotus root is highly nutritious and contains lots of iron and dietary fiber.
